  While visiting Taos, I really wanted a fine dining experience and a well prepared fresh local trout! Nailed both at this establishment! We sat in the bar area at a table by the fireplace. I really liked the rustic wooden tables and all the artwork by a popular local artist. The service was impeccable. The trout entree was superb and perfectly prepared. Such fresh clean flavors from a salsa verde and arugula with preserved lemon salad. My friend had the tenderloin which was thick and so tender cooked exactly as she requested. Her sides were delicious too, but I don't remember what they were! We shared a bottle of French Pinot Noir that blew our socks off! Oregon Pinot Noir doesn't even compare. For dessert we split the Elvis. Oh my. A wonton wrapper filled with banana, Nutella and marshmallow with a peanut butter dipping sauce. Immensely satisfying dinner and ambiance.
